Distilled in 2005, it spent its early years in American oak ex bourbon barrels before secondary maturation in casks that held Pedro Ximénez and Oloroso sherry inside a Spanish solera system for more than fifty five years. The result is mahogany in the glass and remarkably elegant for its strength: brandied plum, mocha and honeycomb on the nose, then plum syrup, treacle, dark cherry and warmed heather honey on a velvety, almost viscous palate, closing with crystallised cinnamon and ginger.

Bottled at a cask strength of 49.2% abv, free from chill filtration and at natural colour. Brandied honeycomb, molasses tart and spiced blood orange on the nose, with bursts of cocoa, black winter truffle and caramelised brown sugar. The palate brings rich chocolate, warm baking spices and clementine zest, followed by molasses, orchard fruits and crystallised ginger, with black cherries and raisin butter on the close.

The Sinteis series – Gaelic for ‘synthesis’ – captures Glenallachie’s passion for boundary-pushing maturation techniques, combining the distillery’s signature sherry cask maturation with the complex influence of different virgin oak species. Where previous editions have combined two separately matured whiskies, Part IV takes a slightly different approach, marrying spirits matured in Pedro Ximénez and oloroso sherry casks together in Mongolian virgin oak. Casks made from Mongolian oak are incredibly rare: the wood requires over a century to mature, and only naturally felled trees can be harvested. Dense and fine-grained, it imparts delicate notes of light caramel, honeysuckle and spice, layering beautifully with the rich influence of the sherry casks. Glenallachie proudly present this limited bottling at cask strength of 58.5% abv, free from artificial colour or chill filtration. Butterscotch and breakfast pastries on the nose, with boozy orchard fruits, cocoa, cinnamon and candied ginger. Hazelnut praline, fig jam and earthy honey join more warming baking spices and a rich waft of vanilla on the creamy palate, with spiced roast orange and bittersweet chocolate on the finish.

From the Macduff distillery on the Aberdeenshire coast, The Deveron takes its name from the river that runs beside the stills to the North Sea.
